How to prepare the Italian Tiramisu with biscuits

Tiramisu is one of the most popular Italian spoon desserts ever, ideal to be served sliced or in a glass as a cold dessert to finish off a sumptuous lunch with dignity. Today we want to show you how well this recipe lends itself to becoming one of the best cakes with Pavesini type cookies.
Before you start to prepare the recipe, it is important to follow a few small steps to get the best result:
- make sure to take the Mascarpone Santa Lucia out of the refrigerator about 30 minutes before preparation;
- make sure the eggs are at room temperature before you start cooking.
- To prepare the tiramisu with Pavesini-type biscuits you must first separate the yolks from the whites.
- Then, in a large bowl, work the egg yolks with the sugar with an electric mixer until you get a soft, white and frothy mixture.
- At this point, take another bowl, put the Mascarpone Santa Lucia Galbani in it and work it with a wooden spoon until you obtain a smooth and lump-free cream.
- Then, add the egg and sugar mixture to the mascarpone (you can also use the icing sugar) prepared previously. Mix everything well.
- Put the egg whites in a separate bowl and whip them with a pinch of salt until stiff peaks (the whipped flake must be nice and shiny). whip the egg whites until stiff
- At the end of the operation, take a spatula and gently add the whites whipped until stiff with the mascarpone cream previously prepared. add the beaten egg whites to the cream4
- Keep the mousse aside and start preparing the coffee. Once ready, let it cool and add it to the Marsala and two tablespoons of water. Then pour this syrup into a deep dish and quickly soak the biscuits in it. At this point, place the soaked biscuits in a baking dish making a layer. dip the Pavesini type biscuits in the coffee
- Then spread a generous amount of mascarpone cream on top of the biscuit base, on which you are going to grate the dark chocolate. Continue making the tiramisu by alternating a layer of biscuits, one of cream and the chocolate flakes.Continue until all the ingredients have been used up.
- At the end of the operation, cover your spoon dessert with a sheet of cling film and put it in the refrigerator to compact for at least 3 hours. When serving, sprinkle the dessert with bitter cocoa.
